How to Make Shrikhand at Home

Shrikhand is a classic Maharashtrian dessert made from hung curd, sugar, and cardamom. Here is how to make it at home with our fresh dahi.
Ingredients
- 1 kg fresh thick curd (dahi)
- ½ cup powdered sugar (adjust to taste)
- ½ tsp cardamom powder
- A few strands of saffron (optional)
- Chopped pistachios for garnish
Steps
- Hang the curd: Tie curd in a muslin cloth and hang for 4–6 hours until thick. The liquid (whey) should drain out.
- Sweeten: Transfer the thick curd (chakka) to a bowl. Add sugar and mix until smooth.
- Flavor: Add cardamom and soaked saffron. Mix well.
- Chill: Refrigerate for at least 2 hours before serving.
- Serve: Garnish with pistachios and enjoy chilled.
